The Winter Solstice for 2022 happens on Wednesday, December 21! This is the astronomical first day of winter in the Northern Hemisphere and the shortest day of the year. After a Winter Solstice, we start to get back our sunlight, little by little, until we make it to the summer solstice.

The term solstice is derived from the Latin words for “sun” and “to stand, so solstices are days when the sun reaches its farthest northern and southern declinations. The Winter Solstice, also known as the pagan festival of Yule, marks the mid-point of winter and brings the promise of new beginnings as we move out of the darkness and into increasingly lighter, warmer days. It signals the return of light after the longest night of the year in the Northern Hemisphere, as from this day forward a new cycle begins of increasing daylight as the sun begins its journey Northward, each day becoming a little bit lighter.

This Winter Solstice seems to disobey the laws of nature but it is true. After that day, although the sun shines longer and longer on the Northern Hemisphere, it does not get gradually warmer. Rotisserie Chicken Noodle Soup

Slow Cooked Rotisserie Chicken Noodle Soup

This is a “tried and true” crock pot recipe that is perfect for the fall, winter, rainy days, or when someone is not feeling well. It takes the favorite elements of traditional chicken soup recipes, some of the advantages of slow cooking, and even some German / Polish influences.

This recipe was always done with a raw, whole chicken, until one day someone suggested a twist which they saw in a book.   They used an already cooked rotisserie chicken.  It really adds another wonderful flavor element to an already delicious recipe.

The other interesting suggested ingredients here are Saffron Threads / Turmeric, and replacing a standard egg noodle with Spaetzle (although a lot of German chicken noodle soup recipes will suggest Vermicelli, but Spaetzle is a hearty alternative).

The Saffron and Turmeric really add a beautiful color to this soup, and Turmeric is an especially-healthy ingredient. Adding a little nutmeg at the end can add a very warming taste, but you will need to not let it be too overpowering.

Once you try this recipe, you will have lots of ideas on how to adapt it to your own taste. There are just two big steps to keep in mind. The first is the main cooking stage where most of the ingredients all blend together. The second stage is adding the chicken pieces and noodles.   The chicken skin of the rotisserie is very flavorful, chop it into small pieces and add back, if desired.

Here is the recipe, with suggestions along the way:

Ingredients

1 Rotisserie Chicken

10 Cups Low Sodium Chicken Broth

1 Large Yellow Onion, Diced

2 Large Potatoes, peeled and diced

2 Cups Carrots, Diced

2 Cups Celery, Diced

2 Cups Corn Kernels (frozen or canned are ok, fresh is best) -or- 3 cups chopped small broccoli florets (8 ounces)

1 pound Geman Spaetzle (or noodles of choice) Homemade Recipe for Spaetzle

1 Tablespoon Parsley, Freshly Chopped (can be more)

1/2 Teaspoon Saffron Threads (Optional as it is hard to find.)

1 Tablespoon Turmeric

1 Teaspoon Ginger

1 Teaspoon Nutmeg

Salt and Pepper

Directions

In a large 6 quart slow cooker add everything except the Spaetzle, the chicken, and the choice of corn or broccoli (or use both!)

Add some salt and pepper at this stage, but make sure not to over season.

Cook on low for 4 hours or high for around 2 or 3.  Longer is fine, too.  While cooking, take your rotisserie chicken and remove meat from bones, and skin from meat.  Chop large hunks of meat to smaller sizes and chop skin into much smaller pieces.  Skin will dissolve and will add great flavor, so don’t throw away.  Add to crock pot.

Cook for additional two hours on low.  Time is flexible.

When finished, open the lid and remove all of the Saffron threads that you can find floating near the top.  Grab a spoonful of the liquid from the crock pot to taste. Add more salt and pepper, turmeric, and/or even nutmeg, if needed.

Now is the time to add your cooked noodles / Spaetzle, corn and / or broccoli.  Mix carefully and let it blend for maybe 20 minutes and then it’s time to serve or just keep warm on counter until everyone is ready to eat.

Interesting Additions / Ideas

  • A rind of Parmesan added at any point in the cooking will slowly dissolve into the soup and adds a wonderful flavor. It might fully dissolve, and if not, just scoop out what is left (yes, it is perfectly safe to eat and is delicious!)
  • We have fresh wild mushrooms in the area and add those during the last stage of cooking.
  • You can really use any standard chicken noodle soup noodle, and even wild rice. If you aren’t sure when to add it to the slow cooker, you can make it separately and just add it to the soup at the end.  If you have an Aldi grocery store near you, they carry different varieties of spaetzle noodles that work well in this recipe.
  • If you like the flavor of Turmeric, add as much as you can, it is amazingly healthy.
  • This is great reheated.  When reheating, give it another shake of Tumeric, Ginger, etc. if you like the flavor as they tend to cook out when reheated.
  • We have received so many compliments on this soup.  It’s a great way to warm up on these cold, winter days.  It is hearty and can be the whole meal, served with dinner rolls or muffins.

Turmeric Ginger Carrot Soup

Serves 4

4 Large Carrots, (or 8 small) peeled and chopped

2 Large parsnips, peeled and chopped

2 to 4 Tablespoons sesame or coconut oil (other oils work as well if you like to use a specific cooking oil for specific health benefits)

1 onion, peeled and chopped

1 Tablespoon minced ginger (more if you really love ginger)

1 Teaspoon ground turmeric

32 oz. Vegetable Broth

 

To Create:

In a large stock pot, heat and then add the oil.

Add carrots, parsnips, onion, and ginger.

Sprinkle in the turmeric, reduce to between low and medium.

Cover. Cook for about 5 minutes. (stir occasionally)

When the carrots and parsnips appear to brown a bit add the broth.

Increase heat to High.

Bring to a boil and cover. Reduce heat immediately, and simmer for 5 minutes.

Test the carrots and make sure they are tender.

Remove from heat and let cool for about 5 minutes.

Blend in a blender or with an immersion blender.

Dr. Gaynor mentions in an article in Shamans Drum magazine that the reason sound (and chanting) are still used in shamanistic cultures is that the sound induces trance states of consciousness conducive to healing.

Like a bell, the tone is produced by striking the side of the bowl with a wooden mallet. By running the mallet around the bowl – only with slight pressure – a pure tone will eventually rise. When this happens, the bowl is said to sing – hence its name. When you rub the edge of a Tibetan singing bowl, one can make the implements vibrate at a certain frequency, which is responsible for emitting this characteristic sound.

When you play a singing bowl, the vibrations cause the right and left sides of your brain to synchronize and emit alpha and theta brain waves in synchronicity with the vibrations emanating from your singing bowl. Theta brainwaves are essential to healing the body and mind and create an experience commonly known as “being in the zone.”

Steps to Make Your Tibetan Bowl Sing —

  • Hold the singing bowl on the palm of the left hand. For smaller bowls, seven inches and under, hold on your fingertips.
  • Grasp the mallet about mid-length, with all the fingertips pointing downwards and touching the wood. Palm downward.
  • Gently tap the mallet against the side of the bowl to “warm-up” the bell.
  • With an even pressure, rub the mallet clockwise around the outside edge of the rim of the bowl. Use a full arm movement, just like stirring a big kettle of soup, and keep the mallet straight up and down! Again, it’s not a wrist movement, but a full-arm movement.
  • When you apply pressure, the friction of the mallet against the outer rim produces vibrations which result in sound.

We love the amazing scent of a burning candle. The many different fragrances from candles radiate a subtle aroma can purify our home ambience. Candles make for an inviting atmosphere. Candle Warmer It’s always fun to try something different. You can enjoy the aroma of a scented candle without a flame if you put it on a coffee cup warmer and let it melt.   Make sure to always use candles in glass containers. Plastic containers will melt and ruin the warmer. This will not work with tealights or smaller candles, nor really large ones. It usually takes about 15-30 minutes before the candle is melted enough to start releasing the scent. When you melt a candle on a warmer, the aroma is much stronger than if you were to burn it.

White sage, used in Smudging, is a flowering perennial that is native to the Southwest U.S.  It has tall woods stems and tiny white flowers that grow in full sun and flourish in the rocky heights of the southwestern canyons.  White sage, an herbal member of the mint family, has been a staple cleansing agent of Native Americans for hundreds of years.  It is now used to cleanse a house of negative energies and spirits, and has been thought to cleanse your body of a wide variety of ailments.

Sage emits negative ions, just as a waterfall or running water emits the same thing. When people are near running water, they feel cleaner, cleaned off or just better for what they believe to be no apparent reason at all.  There is a  reason for this.  Our aura holds positive ions, like a carpet, when you walk across it, creates static electricity.  These positive ions are like dust in our aura and it simply makes us feel sluggish, tired, or just not our usual energetic self.  The smoke from the sage meets the positive ions, clings to them, and neutralizes them out of our aura, and also from the room or house where you live or work.

We love the Sun. Exposure to sunlight during the day is crucial to our well being. Sunlight increases serotonin levels, which in turn can make us happier. Sunlight is effective at improving happiness levels. After decades of researchers telling us to avoid sunlight, scientists are now finding that we may have been doing more harm than good. A lack of sun exposure has been linked to many illnesses. People actually get depressed with symptoms like sadness, fatigue and hopelessness, from a lack of sunlight.

Happiness and the sunAccording to the World Health Organization, getting anywhere from 5 to 15 minutes of sunlight on your arms, hands, and face two to three times a week is enough to enjoy the Vitamin D boosting benefits of the sun. The sun actually has to penetrate the skin, wearing sunscreen and clothing over the skin won’t result in Vitamin D production.

Vitamin D boosts calcium absorption for strong bones, which means you’re less likely to develop bone diseases, fractures and osteoporosis. It has also been shown to reduce blood pressure in hypertensive subjects. Only a few foods, such as fatty fish and mushrooms, contain Vitamin D, so we get most of it from sunlight.

We tend to feel happier and more energetic when the sun shines. When we go for a walk in the sunshine, being outdoors creates more endorphins in the body than being indoors. It is important, though, to get the right balance between too much, and not enough, sunlight. Try to get outside for a little bit of sunlight whenever you can do so safely.

To look at it scientifically – Beer is made from hops, barley and wheat, so the beverage contains many of the same nutrients that grains do, including B vitamins, riboflavin, niacin and zinc. A bottle of beer can contain potassium, calcium and phosphorus, all minerals that are essential to a healthy diet.

Beer is also a source of soluble fiber, which comes from the barley. According to The Brewers of Europe, an organization that represents European breweries, two glasses of beer can provide 10 percent of your recommended daily fiber intake.

Beer contains antioxidants as well. A study published in the Journal of Nutrition and Biochemistry suggests that the levels of antioxidants found in blood are elevated after beer is consumed.

Today beer is still used widely in many cultures as a mainstream medical source.  For instance, in Germany, Wheat beer, or HefeWeizen, is used for many skin and digestive disorders because of its rich source of tannins and other nutrients.

Aromatherapy can do wonders for your body and mind.  After you start experiencing aromatherapy, you will notice the changes.  You can use aromatherapy products and essential oils everyday if you want.  You can make them part of your day.  The benefits from aromatherapy have authorized many of us to relax, be more happy and to overcome some health and mental issues we have wrestled with.  You might be just as lucky if you decide to start trying aromatherapy in your life.

When you’re using essential oils, it is really important to use them in the right way.  Always educate yourself about an oil before it is used by you.  Here are our favorites:

1. Rosemary stimulates the brain. It can improve mental performance.

2. Peppermint oils are known to relieve mental fatigue. They also enhance alertness and memory.

3. Lemon has been known to enhance mental clarity. Plus, it can reduce stress and depression.

4. Eucalyptus oil is most commonly used to open the sinuses and bronchial passages. It is also used to relieve headaches and mental fatigue.

5. Lavender is one of the most widely used aromatherapy scents. It is uplifting and relaxing.

6. Jasmine is used to fight stress and anxiety. It is also an antidepressant.

7. Thyme may help improve memory. It can boost concentration too. Thyme has also been know to relax the nervous system.

8. Sandalwood is often used to calm the nerves. It induces relaxation. It has very spiritually warming properties.

MILK THISTLE

The herb Milk Thistle could be called the liver’s best friend. Milk thistle use not only protects the liver from toxins but it also plays an important healing role too. Milk thistle helps to repair liver cells and promotes the regeneration of new cells. Milk thistle benefits the liver by ensuring that the liver’s daily tasks are carried out and that the liver has the ability to rejuvenate itself.

Milk thistle is a plant that is native to Europe and was brought to North America by early colonists. Milk thistle is now found throughout the eastern United States, California, and South America. The plant grows up to 2 meters high and has large, bright purple flowers.

Milk thistle gets its name from the milky sap that comes out of the leaves when they are broken. The leaves also have unique white markings that, according to legend, were the Virgin Mary’s milk. The above ground parts and seeds are used to make medicine. The seeds are more commonly used.

Milk thistle is taken by mouth most often for liver disorders, including liver damage caused by chemicals, alcohol, and chemotherapy, as well as liver damage caused by Amanita phalloides (death cap) mushroom poisoning, jaundice, chronic inflammatory liver disease, cirrhosis of the liver, and chronic hepatitis.

Milk thistle is also taken by mouth for loss of appetite, heartburn (dyspepsia), gallbladder complaints, enlarged prostate (benign prostatic hyperplasia), a blood disorder called beta-thalassemia, and infertility.

Some people take milk thistle by mouth for diabetes, kidney damage caused by diabetes, hangover, diseases of the spleen, prostate cancer, inflammation in the lungs and chest, malaria, depression, uterine complaints, increasing breast milk flow, allergy symptoms, starting menstrual flow, obsessive-compulsive disorder (OCD), Alzheimer’s disease, Parkinson’s disease, multiple sclerosis, high cholesterol, and menopausal symptoms.

People apply milk thistle to the skin for skin toxicity caused by radiation.

People use milk thistle intravenously (by IV) for Amanita phalloides (death cap) mushroom poisoning.

In foods, milk thistle leaves and flowers are eaten as a vegetable for salads and a substitute for spinach. The seeds are roasted for use as a coffee substitute. (WebMD)

MELATONIN – The Sleep Supplement

Melatonin is a natural substance found in the body that regulates the sleep cycle.  Melatonin is a hormone secreted by the pineal gland in the brain.  It helps regulate other hormones as well, and maintains the body’s circadian rhythm.  The circadian rhythm is an internal 24 hour clock that plays a critical role in when we fall asleep and when we wake up.  When it is dark, your body produces more melatonin; when it is light, the production of melatonin drops.

Melatonin also helps control the timing and release of female reproductive hormones.  Some researchers also believe that melatonin levels may be related to aging.  Young children have the highest levels of nighttime melatonin.  Researchers believe these levels drop as we age.  Melatonin has strong antioxident effects.  Preliminary evidence suggests that it may help strengthen the immune system.

It is suggested that when necessary, use melatonin to reset your body clock when you experience jet lag, by taking it at the appropriate time to sleep in your time zone, even if you are not tired yet.  Set aside enough time for a full night’s sleep before taking any melatonin.

Pycnogenol Supplement

PYCNOGENOL

Pycnogenol, taken as a supplement in pill form, is 50 times more powerful than Vitamin E as an antioxidant.   Taken from the bark of French Maritime pine trees, Pycnogenol is known for its wide array of health benefits.  It can dramatically increase overall well being when introduced into a daily diet regimen.  When taken regularly, it has been known to help maintain healthy cholesterol levels in the body.  The antioxidants it contains help protect cells from free radicals and foreign toxins.  It has anti-inflammatory properties that help restrict inflammation of the lungs and airways.

Pycnogenol has been known to improve the look and feel of your skin.  It can tighten the skin by aiding in the renewal of collagen and protection for outside forces that are working to prematurely age the skin.  It is also known to help relieve symptoms of psoriasis.

Pycnogenol is the US registered trademark name for a product derived from the pine bark of a tree known as Pinus pinaster. The active ingredients in pycnogenol can also be extracted from other sources, including peanut skin, grape seed, and witch hazel bark.

Pycnogenol is used for treating circulation problems, allergies, asthma, ringing in the ears, high blood pressure, muscle soreness, pain, osteoarthritis, diabetes, attention deficit-hyperactivity disorder (ADHD), a disease of the female reproductive system called endometriosis, menopausal symptoms, painful menstrual periods, erectile dysfunction (ED), and an eye disease called retinopathy.

It is also used for preventing disorders of the heart and blood vessels, including stroke, heart disease, and varicose veins.

Pycnogenol is used to slow the aging process, maintain healthy skin, improve athletic endurance, and improve male fertility.
